Cod Fritters with Spicy Yogurt

Ingredients

Fritters

  • 200 g cooked cod
  • 200 ml milk
  • 200 g white flour
  • 10 g baking powder
  • 5 g fine salt
  • 5 g green jalapeño pepper
  • 35 g onion, minced
  • 35 g parsley, chopped
  • 9 g garlic, minced

Spicy Yogurt

  • 200 ml Greek yogurt
  • Sriracha to taste
  • Juice of 1/2 lemon

Looking for a light summer meal or a great appetizer for your next party? Then look no further than this variation on a Caribbean classic. The spicy yogurt dip pairs perfectly with fried seafood, and you can soften its spicy flavour by enjoying with a Kronenbourg 1664 Blanc. Add a salad or some grilled vegetables for a light summer meal, or let your guests help themselves to a few as an appetizer!

  • 200 g cooked cod
  • 200 ml milk

Spicy Yogurt

  • 200 ml Greek yogurt
  • Sriracha to taste
  • Juice of 1/2 lemon

Instructions

For the Fritters

Step 1

Preheat the oven to 350 degrees.

Step 2

Cut the cod into chunks. Arrange them on a baking sheet lined with waxed paper or parchment paper. Do not season. Bake about 15 minutes, or until the fish flakes perfectly. It should be cooked, but not too dry.

Step 3

Place the cod in the bowl of a stand mixer. Add the chopped parsley, chopped jalapeños, minced garlic, and diced onions. Beat the mixture at low speed. Add the salt, flour, and baking powder, then slowly pour in the milk until blended.

Step 4

Meanwhile, heat a deep fryer to 325 degrees.

Step 5

When the dough is uniform and sticky, turn off the mixer and place the bowl on the work surface near the fryer. Take spoonfuls of the mixture and plunge them into the hot oil, releasing the dough from the spoon with your finger. Fry five balls at a time, using a slotted metal spoon to turn them over while cooking. After about two minutes, place the fried dough balls on a paper towel to drain. Salt them while hot.

For the Spicy Yogurt

Step 6

Mix the yogurt with sriracha (or another hot sauce of your choice).

Step 7

Stir in the lemon juice.

Step 8

Serve as a dip with the fritters.

Pair with Kronenbourg 1664 Blanc and enjoy!
